Okra (or okro), known in many English-speaking countries as lady finger or ochro, is a flowering plant of the spleen family.

It is prized for its edible green seed pods. The plant is grown in tropical, subtropical and warm temperate regions around the world. The plant and its teats are also known as "women's fingers". In India, it is known as vendakkai (alternative bendakkai) and bhindi. It is also known by other names such as nkruma (Twi, Fante), betri or fetri (Ewe), engmomi (Ga), ila (Yoruba) and gombo (Bantu / French-speaking Africa / Congo).

Okra is prepared separately as whole teats, sliced ​​or grated. When grated, the resulting food has a slimy texture. It is also cooked with vegetables and meat other than goulash. In the rest of West Africa, okra goulash (or okro goulash) and its variants are called gombo sauce, fetri dessi (Togo), mana rozi, dome sauce (Ivory Coast), or encore soupou kandja (Senegal).

In other parts of the world, such as the Middle East, ocher goulash, such as bamya, is made by roasting whole ocher teats in tomato sauce. Inspired by this vegetarian dish, you can also try preparing a Ghanaian goulash goulash with whole okra pods, which is served on a bed of quinoa or stewed millet as a protein dish.
